Got a veggie coming round for sunday lunch - anyone got any easy veggie main course ideas ? I don't mind doing a litte bit of prep work but I don't want to spend hours over it.
I've had a look on interweb but most recipies look a bit bland so I thought I'd ask you guys.

Not veg either but Madame Huge fancies the odd bit of veg cooking so we have the technology
Anything you had in mind? Was thinking risotto type thing, quite straight forward, get some expensive mushrooms to jazz it up. You can do it in the oven too which frees you up a but. Delia used to have a niced baked red peppers with toms,dead easy too.Has anchovies in but you can leave them out.

Risotto would be OK - I was planning on doing a roast for the non veggies so that could work quite well.
i once went out for a christmas meal - and was given a bowl of rice with veg curry as the vege option when everyone else had a roast with trimmings - i would have loved it if they had bothered to go the(small) trouble of buying in a nut roast for me
(it was a resturant btw -not friends)
a good vege chilli is really nice too
risotto is just a bit boring for a "nice" meal
I am a vegetarian and we still have roast sunday dinners but replace the meat with Quorn or Linda McCartney stuff. Also veggie lasagne is always a big hit or veggie rissotto, mousakka (made with Quorn mince) or a mediteranean vegetable pasta bake.
The options are endless.............

25g butter or marg
225 g of brazil and cashew nuts mixed
100g wholemeal breadcrumbs
300ml veg stock
2tsp marmite
fresh thyme or mixed herbs
Saute onions, grind nuts and bread, boil stock, herbs and marmite, mix well. Will be a slack mixture. Bake for 30 mins gas mark 4/350F.
We tended to serve ours as a dollop rather than a slice, less dry that way.
You can use other nus but again with experimenting that was best combination.
