Will - routinely here winter tri consists of swim (indoor pool), MTB, X-country ski if snow on the ground, X-country run if not. The Gundarsen chasing start is used on the MTB because of having to swim indoors - there's a pause until everyone has swum, then it's a start in reverse order of finish times in the swim, i.e. if you were 1m 40 secs down in the swim, that's how long you start behind on the MTB section. T2 is a normal one, out of the bike shoes and into your run or ski boots.
When I was on climbing in Fontainebleu (hmm, spelling. Anyway, it's in France) I saw a poster for a triathlon - climb/bike/run.
Would have been far more entertaining the other way round - have you ever seen anyone try and climb after they've b*lloxed themselves on a run - very funny! (not for the climber, mind)
There's one in southern Germany which includes a long inline skate course as well as swim, road bike and MTB, and another one that has a canoing stretch.

Road Bike: Distance 88 km, climb 2145 m.
Mountain Bike:Distance 30 km, climb 1180 m.
Mountain Run:Distance 25 km, climb 2175 m.
a tri involving pogo-sticks and space-hoppers might be quite good. 80s-tastic!
