Flanders, I would think that there's probably no real problem with that as long as you're not gaining weight from excess calories, and don't have any windy side effects. Some possible problems could be that excessive amounts of dietary fibre (in excess of 40gm per day) can limit the absorbtion of some minerals & vitamins, and very large quantitiies of vitamin C can cause diahorrea and kidney stones. You're not likely to be overdoing the vitamin C unless you're taking a supplement.
