Righty ho people, I need a recipe for a baked product of some description (cake, biscuit, muffin, etc.) that you know works. I'm supposed to be compiling and analysing a low GI diet, and I want to put some sort of snack in there. But I'm stumped! Have trawled through the interweb with no joy - google has officially failed me. Damn them and their mafia owners!
So? Any recipes? Pretty pretty please??

There is a Nigella cake that has whole cooked oranges in. I thought it was healthy but then I look at the amount of sugar, fat and ground nuts in it!
That Nigella recipe is fantastic! I made it last Christmas - the smell is amazing Not one for the reasonably healthy list though...
