Walker's 'Baked' ain't too bad tasting, v low in fat and less than 100 calories a bag. Someone recommended Walker's 'Light' as having fewer additives but quite frankly IMO they are, erm, 'orrible.
Matt - if you find it hard to motivate yourself to get to the gym on a regular basis, I'd really recommend trying some classes like Cougie mentioned, e.g. spinning, to ge you down there in the first place. It's a great calorie burner and you're more likely to commit if you're booked in. While you're there you can combine it with a weights/strength training session, which really does help.
I think the daily recommeded dose is 6g which is equivalent to 2.4g of sodium. (I just love the way manufacturers quote different things on the back of packs just to confuse you!!)
