Ooompf, I have a Garmin 610 and I am very good trying to follow a schedule that should make me run fast....
I have to program more than 20 steps in interval (like 12 times 400 m and 12 times recovery time) The Garmin 610 "only" does 20 steps. Are there any tricks??

Don't have the 610 but maybe
repeat 12 times
step 1 400m
step 2 recovery
...or something like that. Might be easier doing it in connect.garmin rather than on the watch and upload to watch after.
As above - using connect, set it up as run/rest and then set the repeat to as many times as you want.
