Well I have to report that the rhubarb bread was a disaster- I had cooked the rhubarb first and added some vanilla essence to mimic custard taste but it did not rise- it was like dwarf bread, very solid could keep an army for months, but alas not palatable. I don't quite know what I did wrong, but this did happen once with one of my apricot and banana breads. I may have used too much rhubarb in a desperate attempt to use the last batch. Any suggestions? The taste had it risen would have been good, and quite interesting.
The banana bread I do doesn't use yeast - I'll post the recipe in a mo - you could try substituting for banana or something.
For Russell Hobbs Rapide - in the booklet if you have that breadmaker!
grease tin at start light brown sugar - 3/4 cup mashed 'nanas *ripe) - 1 cup (2 of them) milk - full fat (or add some oil) - 1/2 cup veg oil - 1.5 tbsp (more if skimmed milk) one beaten egg plain white flour (not bread flour) - 2 cups wholemeal flour (not bread) - 1 cup baking powder - 4 tsp salt - 1 tsp nuts - 1/2 cup, or alternatively used raisins (1 cup works ok) or mixed peel.
You can add cinammon as well. Honey makes an interesting change from some of the light brown sugar

Ashley, I don't use salt in cooking at all.

G'night - I've got strawberries and cream to eat
I usually make brown bread & just put extra seeds in as I go.
