The best wya to record is with a GPS, I would say the next best would be a mapmyrun .. its accurate enough for running? Most places for OW swimming have premapped courses tho so you do get a rough idea and a rough idea is all you need In a 'race' situation unless you follow the intended race line you will still only swim the rough distance due to weave and wobble
I have a 310xt and shall road test it in the water at some stage but the 910 is supposed to be better

If you're swimming in open water, how do you know what distance you've done?
Up to now we've just jumped in the reservoir and swum (or is it swam?) for a set length of time, but I want to know what distance I've covered.
OR
If you use a Polar RCX5 or Garmin 910xt they will track the distance using GPS (I don't have either)

I've heard of people putting non waterproof gps devices under their swimming caps as well. Wouldnt risk that myself though.
You could count strokes in the pool for 25m then count strokes in the OWS for a rough guesstimate
Or, could you not get a measurement by mapping the swim on the garmin connect site, in off road mode?

It wont allow for your deviations in the swim though. I guess if you map a 1900m course, you know you will have at least done that
